Fermented Hot Sauces

Follow up: I started to liberally douse my eggs with the Habanero sauce this morning, when my wife advised a more cautious approach.

It was outstanding! Very earthy, pungent and with a great fruit aroma. The saltiness really came through and was delicious on the eggs.

Now my wife wants to try some in her soup tonight.

Was the mold, blue, pink, greenish? Or was it white? If white it may be Kahm yeast. Take a look on the net as there are great photos and descriptions of Kahm yeast, its causes etc.

It was white where it was in contact with the peppers, and on the bottom of the lid it was bluish green.

I just looked at the Kahm yeast articles that came up first in my search. The whitish stuff did not cover the entire surface of the liquid like a lot of the examples in the articles showed. It was thick along the edge of the jar, almost looked like canning wax in it's consistency.

Thanks for the suggested search, learned something new today.

I used to get mold and/or yeast on my fermenting mash until I started using those gas lock fermenting jars pictured in post #1 of this thread. They are inexpensive and available on Amazon.

I too use the air lock tops, but not the ones with the water trap like you use. Those look like the ones I used to use in my Carboys for wine making. They probably work better than the silicone one way valves in the ones I bought.

Since I bought some "Pickle Pipe" brand one way silicone seals, I've had no problems making small batches of sauerkraut. No mold, nor yeast issues.

Hmm, I might have to switch out what I am using. This is the kind I have been using:

They piqued my interest because they had a pump to evacuate the remaining air in the jar.

We mostly ferment sauerkraut and kimchi, and they have worked well for that so far. If I would have put one of the glass weights in at the start of the ferment, I probably could have avoided some of the issues.

Instead of the expensive glass weights we bought flower arranging glass "marbles" at the Dollar store. Left them right in the mesh bags they came in. Washed them thoroughly in hot soapy water then rinsed real well with hot water. Used those to hold the kraut down.

The one way valves let the CO2 escape while not letting oxygen in. Not quite the same as pumping the air out.

The ones I have been using have a one way valve too, Rocky Doc. There is a silicone insert in the center of the lid that provides this function.

Got into the Bloody Mary pickled eggs today. There okay but a bit bland. I was hoping for more zip. I followed the recipe as found so now I get to ad lib with the original recipe as a starting point.

I was pleased to see fruit on the Serrano pepper plant today, albeit covered in oak tree pollen. It is only 6 inches or so tall, but productive already.

The Bulgarian Carrot pepper is almost 12 inches tall, and it is covered in blooms. We planted a sweet-hot variety that is covered in blooms too. The Habanero's and the ghost pepper plant are very healthy, but have not bloomed yet.

Hopefully we will have a good harvest this year to make more fermented pepper sauces. My wife has almost finished off the fermented habanero sauce we made. She's been rotating the sauce with whole pickled habaneros in her soups and bone broths. The frozen whole habaneros have held up well in the freezer too.

Everything outside is a dull yellow right now from the tree pollen. I have been spraying off the vehicles in the evening, but they are yellow again by morning. So a little bright spot from the garden was a welcome sight.

how'd you get them to come up through the snow?... LOL
bout all i got going right now is about 7 or 8 tiny 4" tall white and purple crocus flowers poking out of the mud.
i had to shovel about 8-10"s of snowy ice from in front of the gate to get in to see them.

if they are starting to put out fruits they are either gonna be terrific or they are having some stress and are trying to get some seeds produced.
those look nice and healthy except for the pollen.

Back when I lived in Oregon, seeing the crocus flowers pop up was always a sure indication that Spring was around the corner.

I decided to use my turning fork on the garden this year, rather than the Mantis tiller. The first two clumps of dirt I turned over must have had 50 earth worms in them. It was amazing how many were in the whole bed. And not a single grub worm, which was a welcome thing.

We have a cool front blowing through right now, so our highs will drop from 85 to 78 for a few days...

I always like doing everything to the Max! Then I do something completely different! as you probably can tell from my posts!

When I get to where I get to a point that I have reached success in what I'm doing.... I move on to a totally new field of interest!

i think i only garden because it is hard here.
if it was easy i'd find something else to do... LOL

i'm just getting ready to start my seeds, i think i'm some early still [shrug] but we have been pretty warm this week which is super early.

i'm hoping the new setup will allow me greater freedom in what i can start without a super struggle.
