"Pie"...... and unless you've sorta grown up in the culture,it's pretty hard to put into words?

Mom was full blooded N.C. Moravian..... "pie" is not the treat that most folks enjoy it as. It is part of every meal. And these are NOT a stand alone desert,per sey. Although,they can be. No,"pie" in this case is any number of fillings that make up to nooooot much more than 1/2 to maybe 3/4" thick at most.

Not trying to "sell" anything here..... just something I grew up with. Ya'll should make pies the way "your" Gma made them. One of the things that makes this country so great....is that it IS a big country. How they make pie in NC don't have anything necessarily with how pie is made in say,Minnesota? Carry on.

My grandma makes pecan pie you had to eat with a spoon, very carefully. I'm not sure she knows you have to put eggs in it. Memorable, and not in a good way. Her "jelly" makes a great pancake syrup though, been using it that way for 40 years. Sure-Gel is too expensive, you see.

OK,my bad....was thinking regional,haha.

I will or should? put my pie crusts up against all comers. Have made lots of them on request for special occasions,yada yada.

Invariably,women ask what the secret is..... and apologies for what sounds sexist but,its true.....,they don't get it.

The secret is Brixment..... or any variety of mortar. I can sit and "tell" somebody how to mix mortar till the cows come home. 1 in 10 might just be a natural and get it but,truthfully until you've spent the time either getting your arse handed to you by some nasty,ill tempered brick layer or you've had to use your own messes you just ain't got the mixing down pat. And that,right there is why folks have such a hard time with crusts. Try to explain to a woman how to mix mortar..... if they understand that,they usually can make a decent crust.

Just like I learned how to make home made bread....learned to make crusts. Wifey has a hard time in the kitchen. Carry on.

I am 'rendered safe from abduction' naturally, and pie plays a role in that development. Apple, banana cream, coconut cream, and lemon meringue figure highly in that work product.

Fine looking meringue, I'd call those dead perfect. Tips are right on, browning would
be hard to improve on.

Now, where do you live? :) Probably too far for me to get there before they are all
gone.

I like lemon meringue, but will take Key lime pie over it every time, and really, I prefer
the fruit pies. A really good gooseberry pie is near the top of my list, but cherry, apple
and peach are right there, too.

I cannot recall a pie I do not like. Including rhubarb custard, cottage cheese pie, mince meat pie and all meat pies. My wife makes a number of blended fruit pies. One favorite is wild black raspberry/apple.
