"Tonights Supper on the grill"

:) Tri-tip steaks on the grill (outside in the snow), baked potatoes and salad. Plus a glass of Merlot and walnuts from our tree. Simple but good for me. (No potatoes for me!)

I had a treat tonight: A Nice fried brook trout! Should have been a supper for my late brother so I hope he was here with me! His son gave him 2 big brook trout just before he turned for the worst at the end of August. My SIL pulled them out of the freezer and gave them to me because she said he was the only one to eat them at their house, Felt a bit strange making his last fish that his son brought him...but I said a little prayer to him and felt better about it! Hope he didn't mind that I shared some with our old Tabby, Timmy. He refused to eat all day but as soon as I put my plate on the table he was my pal! He ate about 1/4 of one side...most he has eaten in the past 2 days.
Said another little prayer to apologize for his manners! :rolleyes:
Isn't this exactly the way your brother wants you to remember him?

Best thing we can do for those near & dear who have gone on is remember them often and with fondness.

Found a frozen container of 5 Bean stew In the freezer from last January! Must not have had any meat in the house at that time because It had beans, potatoes carrots and wild mushrooms& no meat ! So I fried up some beef tongue and added it in! Pretty decent hardy meal

ham that was sliced for lunch meat baked in the oven... [don't ask i didn't].. it was crisped on the edges just how the dogs like it.
regular old macaroni and cheese [yeah box]
and some canned beets.
why we have canned beets is beyond me i know there's at least 10 jars of pickled beets from the garden down there.

Ooh man!!

SIMPLE SIMON fresh Salmon. EVOO & Dannos (green top) seasoning. Let sir in frig W/ oul & seasoning couple hours.
Then cooked only 10min in air fryer.

OMG. Simple but OOH SO DELICIOUS!!!!

Well with the Arctic Freeze thats happened/happening. Im worried my lil smoker probably wont make temp!! So I smoked today. Got up about 05:00 ta get things started.

Started with the Pork Belly pulled it just about 15:00. Salmon was ready ta go on so I smoked that too!! Both came put fabulous! Just pulled the Salmon off.

The Pork Belly was drained and I made a dipping sauce from the juices. Boiled it down to almost a gel! (Allota brown sugar) I added cognac and little water to get consistency I wanted. WOW WOW WOW!!!

Tomorrow afternoon Ill put the pepper poppers a d Kielbasa on. Then head out about 16:00 to start the festivities.

Smoked Venison Football roast for Christmas dinner!!!

Pop came down and he loves Venison as we do. Its just the three of us so we gonna have left overs for days!! But thats Venison Samiches!! ♥️♥️

It looks like It will only be Karen and myself today and also for Christmas,
So Tonight we had Polish Pierogis that traditional way ( boiled and served with melted butter) Karen like Farmer Cheese ones ( her family tradition)
and I had the potato and cheese ones along with cabbage filled ones ( my family tradition).
Later tonight we will brown off a 3 lb Angus bottom round roast and put it in the crockpot on low! Will let that cook tonight until I get up to take my BP meds about 2:30 am and I will turn it down to "keep warm" then turn it back up at 8 am And added potatoes and carrots.
Then eat at supper time. Best deal on good beef (under $12.00 ) we could find for just the 2 of us !
For breakfast ( since we can not buy red kiszka (blood sausage) anymore Since all the old folks are dying off )
We will be having Scrapple and Eggs !

Just the wife and I also today and tomorrow. Left over pork loin from last nights Christmas dinner for friends. Tomorrow will be huckleberry pancakes with bacon and eggs for brunch and rib steaks and salad for dinner.

Will be firing up the grill about 4:30 for the 5:00 Big Mike's. Yep, it'll be our first non-traditional Christmas dinner, but sure is a lot easier and less expensive than our usual. Daughter, son-in-law and the two grandkids, my wife and I. My son is working six 12s, at the refinery, so that part of the family will be down later in the week or after the first.

i like mixing it up for the holidays.
thanksgiving it was spinach greek stuff.
i got some egg rolls [vegetarian] for Christmas.

i just took the first Turkey out of the smoker after 7hrs.
the second one will go for 5hrs. tonight at a higher temp and then get wrapped and chilled in the fridge and ovened off tomorrow afternoon.
i usually cut them in half and smoke the bottom, then re add the breast so you get a half and half.
it usually surprises the guests over to Littlegirls place when one is like mmm smoked turkey and the person across from them is like thehell there's no smoke here.
this year they got Brined in a spice/garlic/dried onion mix and the flavors come through about 4-5 bites in, there's a touch of heat, but the turkey is front and center.

all right i gotta write this one down.

filo dough.
feta cheese.
4 eggs
stick of butter.
12 oz's of sparkly water.
parmeson on top.

bake for 30-35 in a 350 oven 9x13 glass baking dish.[brushed with butter]

it's a smash type pie.
you butter the clear glass pan.
then lay a sheet of dough in it.
sprinkle the cheese on top and push the whole thing to the edge of the dish folding it like a fan.
repeat and repeat and repeat until you get to the close end of the baking dish.
mix the eggs, dump the butter in with them [not real hot just melted] and dump the whole thing in on top.
pour in 8-10 oz's of tonic water [you heard me] first.
sprinkle some parmasan on top much as you like, but more is not better enough is plenty.

that's it no salt no pepper no nuthin.
make sure the oven is up to temp.
spinach or the like would be an excellent addition, as would 1-2 more eggs if you like eggs, but you'll have to lower the tonic water amount.

Today for lunch We had a homemade Smoked Polish Kielbasa & Boiled potatoes and carrots! Made a condiment mix of White horseradish, Polish mustard and ketchup!
Tonight it was Fillet of Sole Mediterranean style with Limes from my Lime tree! There is still a few more hanging on through the winter!
And now a piece of Lindt 85 % chocolate with 2 oz of Evan Williams!
