Canned beets are cooked in brine (pickled) and are barely accceptable to me. Never had frsh ones. Dad said raw field potates were actually pretty good, not for me.

thumb size Yukons or reds are dirt edible.
we done red taters this year, they won't make it much past golf ball size.

i'll have 2 batches of beets this year, bout 250-275 of them.
most will get pickled, a few will be boiled or baked.
all of them are from my own seeds, i really like the smell of a Beet plant in flower so i do 2-3 of them in the green house.

roasted in Oven and/or smoked (light smoke) on the grill, are my favorite way to cook beets.
Oh, and leftover roasted beets are great also, slice and put a fresh basil leaf on it and then a drizzle of EV Olive oil.

I can't think of a vegetable I dislike. Greens are my favorite. Nothing like deveigning fresh collards, browning a couple of hocks, and stewing the collards with them for several hours until they're almost as soft as canned spinach. If they're fresh enough, almost no water needs to be added.

Brussel sprouts need several hard frosts on them before picking to make them mild and sweet.. When I lived in Canada (weekend farm was in upstate NY) we did not harvest the brussel sprouts till there was snow on the ground. I would grow about 150 plants.
