Winelover covered it. Red horse is a large sucker with golden/silver scales and reddish fins. On the other hand, the only canned horse I ever ate was a pinto. A 28 year old mare that got scared in a T-Storm, slipped on the wet clay and split her pelvis. Not my horse, but I shared a few jars with the owner, it was good too! 100% agree with that. Horse meat is very good. My wife is as big a horse fan as you could be, rides EVERY day. Rain, snow, heat. She asked for seconds!Not my horse, but I shared a few jars with the owner, it was good too! Just like canned venison, beef, or buffalo.
I think Red Horse Sucker Fish are what we in Texas call Carp.

Red horse suckers are a native fish, carp were introduced in the 1880's. With all the ecological damage imported carp have done it is a shame. That said, carp smoke up very well also. My Dad used to smoke it over apple wood and it was like fish ham. He'd take a wash tub full of chunks wrapped in waxed paper to work with him and sell every piece in a day.I think Red Horse Sucker Fish are what we in Texas call Carp.
